My Favorite Holiday Recipes
I have many great cooks in my family. As for me, I am not a cook; I prefer to eat the deliciousness rather than take time to make it. Fortunately, my girls love cooking and have been taking lessons from their dad. My cousin, Michelle, has also just started her own local catering business. She has shared some of her favorite holiday treats with me! I want to share them with you! Maybe you can prepare them with your own children (great family activity- hint hint).
Ingredients Topping:

1 box (8-serving size) Jell-O™ raspberry-flavored gelatin
2 cups boiling water
Crust: 3 cups mini pretzels, crushed
¾ cup butter, melted
3 tablespoons sugar
Ingredients Filling:
1 package (8 oz) cream cheese, softened
1 cup sugar
1 teaspoon vanilla
1 container (8 oz) Cool Whip™ frozen whipped topping, thawed
10 oz raspberries, fresh or frozen unsweetened
Directions:
In medium bowl, dissolve gelatin in boiling water; set aside to cool to room temperature.
Heat oven to 350°F. In medium bowl, mix Crust ingredients. Press into ungreased 13×9-inch (3-quart) baking dish. Bake 10 minutes. Cool on cooling rack.
In medium bowl, beat cream cheese, 1 cup sugar and the vanilla with electric mixer on medium speed until smooth. Beat in whipped topping. Spread over cooled crust.
Spread raspberries over filling; pour cooled gelatin on top. Refrigerate 3 to 4 hours or until firm. Cut into 4 rows by 3 rows.”

Ingredients:

I unbaked pie shell
3 eggs slightly beaten
1 cup corn syrup1 cup sugar
⅓ cup butter melted
1 1/2 t. Vanilla1 ¼ cups pecan halves
Directions:
For filling, combine eggs, corn syrup, sugar, butter and vanilla.
Mix well.
Stir in pecans.
Pour filling into shell and bake in a preheated oven.Bake 45 minutes.
The pie is done when the knife comes out mostly clear- pie might slightly jiggle in the middle, but will as it cools.

9 Inch pie shell (Option: Graham Cracker Crust)
2/3 cup sugar
1/4 cup cornstarch
1/2 tsp salt
3 cup milk
4 egg yolks- slightly beaten
2 tbsps butter or margarine (softened)
1 tbsp plus 1 tsp vanilla
Directions:
Prepare pie shell
Stir together sugar, cornstarch and salt in sauce pan
Blend milk and egg yolks
Gradually stir into sugar mixture
Cook over medium heat, stirring constantly until mixture thickens & boils
Boil & stir 1 minute
Remove from heat
Blend in butter & vanilla
Place plastic wrap onto filling in saucepan and cool to room temperature (this step prevents film from forming on filling)
Peel and slice bananas, arrange layer of banana slices in pie shell (completely cover bottom and sides).
Pour in cooled filling
Chill pie thoroughly at least two hours.
Top with whipped cream.

Turkey Brine By Michelle Tracy

Ingredients:

2 cups brown sugar·
1 ½ cups kosher salt·
5 cloves garlic (crushed)·
4 cups apple cider·
3 oranges quartered·
2 sprigs thyme·
2 gallons water
Directions:
Mix and bring all to a boil in large stockpot. Stir, make sure salt and sugar dissolve.
Remove from heat.
Place turkey in brine bag or large (sanitized) bucket with lid.
Cover with the brine.
Let marinate overnight.
After marinating overnight, 24 hours, remove turkey and pat dry.
Season with salt, pepper, and butter under breast skin.
Roast at 325 degrees F for an unstuffed turkey, it is approximately 15-20 minutes per pound.
Make-Ahead Sausage Apple Stuffing

Ingredients
1 box turkey flavor stuffing mix
1 box cornbread flavor stuffing mix
1 lb spicy pork sausage
2 mid size green apples, peeled and diced
+ a bit of stock as needed
Directions –
Brown sausage, set asideSauté apples until they start to become tender, set aside
Prepare both boxes of stuffing mix via directions on box
Combine all together, adding stock in small increments if too dry
Press into 9×13 glass dish and cover
Heat through in a warm oven before the big feast.
Awesome Artichoke Dip by Michelle Tracy

8 oz soft cream cheese
1 cup Mayo
1/2 cup grated parmesan
1 cup shredded mozzarella
14 oz – 17 oz canned artichokes (chopped)
7 oz can green chiles (chopped/diced)
Dash hot sauce
Dash Worcestershire sauce
Add chopped green or sweet onion if desire
Bake it until bubbly at 350 degrees F.
Serve with bread or chips.
Aunt Mary Beth’s Creamy Mashed Potatoes
Ingredients:
10 lbs of boiled potatoes,
1 stick (1/2 cup) butter,
2 cups sour cream,
1 splash or 2 of milk and
Add salt and pepper + chives to taste
Cook to creamy deliciousness!

Ingredients:
3 sweet potatoes (about 2 pounds), peeled and cut up
Nonstick cooking spray
1/4 cup packed brown sugar or brown sugar substitute equivalent to 1/4 cup brown sugar
2 eggs, slightly beaten
3/4 teaspoon ground nutmeg
3/4 teaspoon ground cinnamon
1/2 cup fat-free milk
1 cup coarsely chopped pecans
1/4 cup packed brown sugar or brown sugar substitute equivalent to 1/4 cup brown sugar
1/4 cup all-purpose flour
3 tablespoons butter, melted
Directions:
In a covered large saucepan, cook sweet potatoes in enough lightly salted boiling water to cover for 25 to 30 minutes or until very tender.
Meanwhile, preheat oven to 350 degrees F.
Lightly coat a 1-1/2- to 2-quart oval baking dish or a 2-quart square baking dish with nonstick cooking spray; set aside.
Drain sweet potatoes; return to saucepan.
Using an electric mixer or potato masher, mash sweet potatoes until smooth.
Stir in 1/4 cup brown sugar or brown sugar substitute, the eggs, nutmeg, and cinnamon.
Add milk; stir to combine.
Pour into the prepared baking dish.
In a small bowl, combine pecans, 1/4 cup brown sugar or brown sugar substitute, the flour, and melted butter; sprinkle over sweet potatoes.
Bake, uncovered, about 30 minutes or until sweet potatoes are heated through and topping is golden brown. Serve warm.
